Let's go back to the origin of coffee - Ethiopia. Among the best coffees in the world is the Ethiopian Limu coffee produced in the heart of the Limmu region. It is one of the least caffeinated cafes in the world. It is both very smooth and very rich in aromas, which offers a perfect balance when tasting. It is also ideal, because it offers a delicious and fruity nose. The texture of the brewed coffee is very vinous. Ethiopian coffees are known to be very complex with nice delicate notes of lime, exotic fruits and white flowers.
Very lively in character, Ethiopia produces these magnificent beans in the heart of Limmu. Coffee is classified in the aromatic repertoire of flower and fruit. The dominant aromas are lime, apricot and chamomile. It is between 1'000 and 1'800 meters of altitude that the coffee is produced and washed to obtain a dense character.

The Specialty Coffee Association (SCA) defines a high standard coffee analysis procedure to assess all the peculiarities of specialty coffee. SCA determines the value of smell, aroma, body, acidity, possible defects. A coffee is rated on a scale of 100, and must obtain a minimum score of 80 points to be able to be determined as "specialty coffee".
