We are delighted to introduce our first ever Fundamental Brazil offering. Hailing from the south of the Minas Gerais portion of Brazil’s so-called soft coffee belt, this microlot comes from the Cerrado region. Cerrado coffees are prized for their sweet, chocolatey notes and honey-toned sweetness.

This lot was harvested with only ripe cherries and was immediately taken to the farm’s masonry yard to dry. The drying was initially left on the patio for three days without turning, only making the first turn after 3 days, and then turned consistently until it reached 16% humidity. Next, the coffee was stored in a big bag, to create an anaerobic environment, where it remained for 30 days. Finally, it was placed back on the patio to slowly finish drying until it reached a humidity of 11.5% humidity. In total, the drying and resting process took 2 months.

In short, this coffee was loving prepared to achieve a unique and memorable flavor profile. Fazenda Cerrado is an extremely limited offering, and we purchased the entire two bag lot! Desfrutar!

Our logo, the black circle with a never-ending wave pattern, is a stylized representation of the “third harmonic,” a common concept in music.  The first harmonic is the lowest frequency (the fundamental frequency) produced by a specific musical instrument, and since music and coffee go together and inspire us, we thought this was an excellent logo.  (There’s some cool physics at work in all this stuff about frequencies, sinusoids, and Chladni plates, but the Internet is a better source for that than our Web site.)
