An exceptional limited release lot from top-notch producer (and coffee superstar), Wilford Lamastus.
Elida Estate has made quite a name for itself in the past several years, consistently ranking in the top 10 of the ‘Best of Panama’ competition. Wilford Lamastus, proprietor of Elida Estate, is a third generation coffee farmer who says he was “born” a coffee farmer, using the farm as his playground as a child. He is now teaching his son the trade, continuing the family tradition.
Wilford’s farm lies on some of the highest ground in Panama. The coffee plants are shade-grown in rich, fertile volcanic soil. (Plants love this soil because it’s filled with easily-accessible nutrients and retains a high amount of water.) These almost perfect growing conditions paired with WIlford’s expertise and constant drive to improve and experiment with processing techniques has cemented Elida Estate’s ‘high-end specialty coffee’ niche in the coffee world.
In Wilford’s words, “the super-specialty coffee industry is dynamic, challenging, competitive, innovative, there are always new players doing something new in thousands of super-specialty coffee farms around the world to improve quality. Therefore, every year we do something new in the mill and the farm to improve quality.”
We sampled several lots from Elida Estate this year, which is, like, super hard because you’re picking from the best of the best. Thankfully, there’s no wrong choices from this farm. So, we landed on this specific lot (35A) because it spoke to us a little differently than the others: the subtlety sweet richness of a fresh fig, the mild acidity and juiciness of a dark purple concord grape and the velvety delicateness of honey.
