Nick and I decided to stop dreaming about starting a coffee company together and that 2018 was the year to make it happen. We took an immersive coffee roasting course together in San Francisco with renowned experts in the industry. We’ve been passionate about coffee for years but after the crash course, we were obsessed. We spent the next 8 months honing our craft, sampling hundreds of coffee from countless suppliers, and working through our potential offerings.

From the start and throughout this entire journey, we knew the cornerstone to our coffee program would be quality, consistency, and freshness. We sought out quality by working with partners like suppliers and importers that were serious about their coffee. Our chosen partners were not only thoughtful with their relationships at each step but also took special care in shipping the coffee to our roastery. Our consistency was derived from roasting in small consistent batch sizes that allowed us to control the roast and develop the coffee in a way that removed any bitterness or charred taste. Finally, freshness was key, meaning that every coffee on our menu was only recently harvested from our favorite coffee farms and partners. We spent careful time discovering coffees with remarkably similar taste profiles which allowed us to rotate to fresh crop during the year, all while keeping a consistent flavor profile in the finalized product.

We formed a relationship with Regalia Collective in Long Island City, Queens. As newcomers to the coffee industry, Nick and I were lucky enough to have stumbled right into Regalia's welcoming arms. Regalia, it’s resources, and the other roasters have been crucial to our early kickoff and success so far. Regalia's expertise, support, breadth, and depth of knowledge, and overall genuineness have allowed us to grow as roasters and uphold our mission to fresh, quality, and consistent coffee.

Sustainability Efforts:

We also decided to attach our company to a larger mission than just selling the best tasting coffee we could get our hands-on. That's why in the middle of 2019 we decided to partner with One Tree Planted and give back to coffee-growing communities. We also teamed up with GrainPro to seek out the creation of a recycling program for their coffee bag products.

One Tree Planted:
Based on 1% of our yearly revenue, we plant a tree in a coffee-growing region to combat deforestation. Trees help clean the air we breathe, filter the water we drink and provide habitat to over 80% of the world's terrestrial biodiversity. Forests provide jobs to over 1.6 billion people, absorb harmful carbon from the atmosphere, and are key ingredients in 25% of all medicines.

GrainPro:
We have teamed up with GrainPro to improve the recyclability of their hermetically sealed bags to set up a recycling program on the East Coast. All our coffees are sourced in GrainPro bags due to the quality of life benefits received by smallholder farmers such as 20 – 70% increase in revenue to common market value, food/crop loss prevention, and environmental impact by farmers not having to use synthetics or harmful chemicals.

 

We are continuing to grow our company and refine our coffees, while still maintaining all our original goals. We are currently exploring new product offerings like Snapchilled coffee cans and have plans to enter new markets.

Nick and I have really been enjoying providing you great coffee, hearing your feedback, and positively impacting the communities around us as well as our coffee communities around the world.
