Located in a lush valley near the extinct volcano Tecuamburro, Finca Nuevo Vinas has been farmed by the Keller family for over 100 years. This long history has seen the farm undergo many changes, with one of the most important being the decision in 2003 to make a full transition to organic farming. Sustainability and environmental stewardship are key components of their philosophy, with 200 hectares of their land set is aside as a nature reserve.
Since 2007 Caffe Vita has been purchasing coffee from this remarkable farm, establishing a meaningful relationship and a direct connection between grower and roaster. We continue to be impressed with their sustainable farming practices and tireless experimentation in organic and biodynamic techniques which have steadily improved the health of the farm and in turn the quality in the cup.
On-site processing ensures that the fruit is handled with care at each stage - from cherry selection to density separation, pulping, fermentation, and sun drying. The pristine facilities and attention to detail encourage a consistently clean and delicately nuanced coffee

Caffe Vita
Caffe Vita has been roasting coffee in Seattle since 1995 as an independent & locally-owned company. From our beginnings at the base of Seattle’s Queen Anne neighborhood, we now operate 11 cafes throughout Seattle, Portland, and New York. Caffe Vita coffee is always fresh, imported directly from the farm, and roasted on-site in Seattle, Brooklyn, and Portland.

We are pioneers of the Farm Direct movement, meticulously sourcing the best coffee available while developing long-term, mutually fruitful relationships with coffee growers in more than 11 countries. We work with and invest in farmers who are committed to sustainable practices. Caffe Vita is always fresh, imported directly from the farm and roasted on-site.
SINGLE ORIGIN
Our thoughtfully curated, seasonally rotating selection of single origin coffees highlight the diversity of flavor profiles that exist throughout the world. These are coffees specific to an individual farm, cooperative, or distinct growing region. We carefully consider elevation, soil, climate, varietal, shade cover, processing method, and seasonal influences.
ROASTING
We use vintage Probat and Gothot roasters, allowing full manual control over the process and giving our roasters the ability to monitor and adjust every stage of flavor development throughout the roasting process. Maintaining the consistency of our blends and expressing the distinct nuances of our seasonal single origins is the core of our approach.
